I used to marvel at the absurdity of leaving a single piece of a house standing, when obviously the entire house is being torn down and replaced. But then I was told that California building codes consider this to be a "remodel" rather than new construction, apparently with less stringent requirements or lower costs.
I guess if it could save me a lot of money, I could work around an old chimney, too.
